Ingredients:

  • For the Noodles:
    • 200 grams chowmein noodles (or any thin noodles)
    • Water for boiling
    • 1 teaspoon oil
    • A pinch of salt
  • For the Vegetables:
    • 2 medium onion, thinly sliced
    • 2 medium carrot, julienned
    • 2 cup cabbage, finely shredded
    • 1 bell pepper (capsicum), julienned
    • 1/2 cup green beans, cut into 1-inch pieces
    • 2-3 spring onions, chopped (separate white and green parts)
  • For the Sauce:
    • 2 tablespoons soy sauce
    • 1 tablespoon chili sauce (adjust to taste)
    • 1 teaspoon vinegar (white or rice vinegar)
    • Salt and pepper to taste
  • Other Ingredients:
    • 4 tablespoons oil (preferably vegetable or sesame oil)
    • Aji –No- Moto ¼ Tablespoon (optional)
    • Tomato Ketchup ( Adjust to taste)

Instructions:

  1. Prepare the Noodles:
    • Bring a large pot of water to a boil. Add a pinch of salt and 1 teaspoon of oil.
    • Add the noodles and cook according to the package instructions until they are al dente.
    • Drain the noodles and rinse them under cold water to stop further cooking. Toss with a little oil to prevent sticking and set aside.
  2. Stir-Fry the Vegetables:
    • Heat 2 tablespoons of oil in a large wok or frying pan over medium-high heat.
    • Add the minced garlic , sauté for about 30 seconds until fragrant.
    • Add the sliced onions (and the white parts of the spring onions) and stir-fry for 1-2 minutes until they become slightly translucent.
    • Add the carrots, green beans, and bell pepper. Stir-fry for 2-3 minutes.
    • Mix in the shredded cabbage and cook for another 2 minutes. The vegetables should remain crisp.
  3. Combine Noodles and Sauce:
    • Add the boiled noodles to the wok with the vegetables.
    • Pour in the soy sauce, chili sauce, and vinegar. Season with salt and pepper to taste.
    • Toss everything together gently to coat the noodles evenly with the sauce and vegetables.
    • Stir-fry for an additional 1-2 minutes on high heat. Ensure that the noodles are heated through and all flavors meld together.
  4. Final Touches and Serve:
    • Turn off the heat and add the green parts of the spring onions.
    • Give a final toss and adjust seasoning if necessary.
    • Serve hot as a delicious main course or side dish.
